Next Best Thing to Bruddah Iz
my own creation, combination of other recipes
(haupia, chocolate pudding layered dessert with nut crust)

Crust:
(see Hilo Haupia Squares crust recipe and instructions.)

Haupia Mixture:
(see Hilo Haupia Squares haupia recipe and instructions) stop before pouring in to crust.  Keep stirring occasionally to prevent setting.

Chocolate Pudding:
Mix up 1 large packet and 1 small packet of instant chocolate pudding, according to directions.  Let sit for a few minutes to thicken.

Whipped Cream:
Make up about 1 pint of whipped cream, sweetening the cream to taste. Or, you could use Cool Whip.


Layering:
Pour and smooth a layer of haupia, then a layer of chocolate pudding, repeat.  Top with whipped cream, and garnish with toasted coconut or nuts, if desired.

Note: Macadamia nuts can be extremely expensive or hard to come by on the mainland - pecans can be used for the crust in place of mac nuts.



Hilo Haupia Squares

Macadamia cookie crust:
1 cup butter
2 cups flour
1/4 cup light brown sugar
1/2 cup finely chopped macadamia nuts

Haupia Mixture:
2 cans frozen coconut milk (or canned)
2 cups milk
1 cup sugar
1/2 cup cornstarch
1 cup toasted sweetened flaked coconut

Preheat oven 350.

In med mixing bowl, cut butter into flour.  Stir in brown sugar and mac nuts and mix well.  Press dough into 9x13 pan. Bake 15 min, or until lightly browned.  In large suacepan, mix 2 milks.  Mix sugar with cornstarch, and stir into unheated milk.  Cook on medium heat, stirring frequently, utnil mixture thickens.  Pour mix over baked crust.  Chill.  Garnish with coconut and strawberries.
Cooking tip: oven toast flaked coconut on a dry baking sheet in preheated 325 oven, turning coconut occasionally until lightly browned.

Note: Pecans can be substituted for macadamia nuts.
Hawaiian Teri Chicken

1 cup shoyu (see note on other teri chicken recipe)
1 cup water
1/3 cup sugar
thumb size fresh ginger, cut into thin slices

Mix, put in pan with chicken thighs.  Bake 350 for 2 hours.  (see other cooking notes in Uncle Bill's teri chicken recipe)

chicken thighs
1 cup shoyu (Aloha Shoyu is the best, use low sodium soy sauce if can't get shoyu)
1 cup sugar
ginger
garlic
Marinate overnight. Bake in juice.

Note: I have found Aloha Shoyu at Harmon's! We marinate and then BBQ, Bake, or I also cook in the sauce in the crock pot.  For thighs in the crock pot, 4 hours on low is probably good enough. Too long and the chicken gets dry. 

True Poly Style means no recipes with measurements.  It's all just a list of ingredients, and then done by taste. Happy experimenting!

(my adaptation from several other recipes and trial and error)

Rolls:
Cheater way - use Rhode's Rolls
Or use the roll recipe from your favorite cinnamon rolls.  

Coconut Sauce:
2 cans coconut milk
1 cup sugar
add cornstarch to thicken (about 1 T)

Heat coconut milk and sugar until sugar dissolves and milk thickens a little.  Sweeten the milk a little more than you feel comfortable, and then it will be just right after baking. 

Place rolls in 9x13 pan sprayed with cooking spray, spaced about3 across by 5 down or 4 rolls across by 6 rolls down, depending on how many you are making and how big you want them to be.  Pour 1/2 of the coconut milk mixture over the frozen rolls, allow to rise (will rise quite a bit more during baking, so you don't have to wait for them to raise all the way).  Meanwhile, preheat oven to 350.  When rolls have risen, bake for 15 min, or until tops are golden.  Pour the rest of the coconut milk mixture over top.  Serve warm.
Kalua Pork

3 lb pork butt
2 cups water
1 tsp liquid smoke
1/4 cup Hawaiian salt (or rock salt or sea salt)

Place pork fat side up in roasting pan.  Combine water and liquid smoke, pour over meat.  Sprinkle with salt.  Cover and roast in oven/crock pot at 400 degrees for 3 hours. Remove from pan and shred.  Serves 6.

Hawaiian Mac Salad Recipe

hawaiian macaroni salad recipe 3 cups large macaroni
1/4 cup grated carrot
1 cup mayonnaise
1/4 cup milk (may require less, only use to moisten)
salt & pepper
Directions for macaroni recipe:
--Cook macaroni until tender.
--Add grated carrots, mayonnaise, and milk till well coated.
--Salt & Pepper to taste. Add more mayonnaise if you prefer a wetter salad.
--Cover and chill in refrigerator for at least one hour.
--When ready to serve, add more mayonnaise if needed to remoisten salad.
Serves 4-6
If you prefer, you can add some of your favorites like: peas, cubed cheese, tuna or celery for your own variation. If you've never had a great Hawaii macaroni salad you are in for a real treat.
This recipe for Hawaiian macaroni salad is a Hawaiian staple. Be sure to serve it with your favorite Hawaiian meat and sticky rice, just like any respectable Hawaiian plate lunch would have.
Mama's Watermelon Otai

Ingredients:



1 Ripe Seedless Watermelon halved and sliced
1 can of Crushed Pineapples
1/2 cup of shredded coconut
1 can of Evaporated milk
1/2 Cup Sugar
Water
Ice Cubes


Directions:

In a large bowl grate watermelon with a fork making sure melon is not in huge chunks. (If you don't use a seedless watermelon make sure that most of the black seeds are removed with a spoon)

Add Pineapple and it's juices, Coconut, Evaporated Milk, and two cans of water using the can of milk. Stir.

Add Sugar and stir add more to taste.

Add Ice Cubes and Serve.
